So I love, love, love ribs. When I went to get groceries today ribs were on sale so I felt as if that was a sign to buy them!
So I just put them in the fridge for a 48hr marinate!
Here's the recipe:
Quincy Jones' Famous Ribs
5 pounds of baby back ribs or any other ribs of your choice
2 green bell peppers, thinly sliced
2 yellow bell peppers, thinly sliced
2 red bell peppers, thinly sliced
2 onions, thinly sliced
6 garlic cloves, finely chopped
2 jalapeno peppers, finely chopped
Lawry's seasoned salt
Ground black pepper
(this time around I added some chicken and rib BBQ sauce to the mix I let you know how that turns out)
Season ribs with salt and pepper. Rub chopped garlic and jalapeno peppers onto ribs. Layer sliced peppers and onions on top of ribs . Wrap in foil (wrap each rib individually) and place in the refrigerator for 24-48 hrs. When ready to prepare, unwrap ribs and let come to room temperature - about an hour.
Bake in 300 F oven for 6-8 hours. Ovens vary your ribs may need less than or more than time specified. Use a heavy duty pan covered in foil, and be sure not to place the ribs on a low rack in the oven. Again, because ovens vary be sure to check your ribs to avoid burning.
